Helen's Bean and Potato Stew

I have now taken three cooking classes through Helen's Kitchen: her invaluable Pasta and Gnocci Workshop, the wonderful Tender at the Bone meat class, and my first cooking class ever, One Fish, Two Fish, Red Fish, Blue Fish. Her RSS Feed spills into my iGoogle page whenever she creates a new post on her blog, and I was very excited to discover her recipe for Provençal Green Bean and Potato Stew last week.

Gotta give props, right?

This was a particularly wonderful discovery because, apart from the quantity of olive oil, this delicious vegetarian stew was Core to the core—although, I confess, I treated myself to a second helping (not so Core).
